Just north of Asheville, the friendly family-owned Tortillas La Regia makes big batches of tortillas daily and sells them retail. Restaurants buy them too. Flour tortillas are always in stock and you can find the corn ones now and then. I load them up with cheese, and maybe spinach and Trader Joe’s Hot & Sweet Jalapenos, then just brown them on both sides in a pan, no oil or butter necessary. The housemade salsas make the simple meal even better. Start with the red salsa and the green one, salsa verde, before getting experimental. You can often pick up a simple soup or tamale too. Owners Luz and Martin Maldonado make a few items, and they make them exceptionally well.
