One Delicious Dish: Ricotta Gnudi at Boca

Boca, the kitchen-bar-market in Winter Park, has a new chef--and that's good news, since the place was more about vibe than food. Now it's worth the trip for meals. Ricotta gnudi at Boca

At a media tasting this week, I was, frankly, floored by every course. The most impressive, to me, was this ricotti gnudi, which is a plump pasta made with soft ricotta cheese. Here it's surrounded by ingredients involving fresh peas, bacon marmalade, a seven-minute egg, radish, and Meyer lemon. I can not begin to tell you how scrumptious it was.

Here's a quick rundown of the other treats from Boca.

A raw oyster with some sort of cream and hot sauce

Arctic char with carrot dashi, mirin-cured beets, heirloom carrots, and dill flower

Chicken wing with fried green tomato salad, buttermilk nage, and onion scapes

Wild boar ribs with bacon creamed corn, sweet pepper gastrique, and squash blossom polenta

Every single one was spectacular--even that chicken wing, which I'd figured would be bland.

Time to try out Boca, or, if you had a bad experience, to try it again.
